Luck of the Irish Stew

Irish Stew

Irish stew was traditionally a thick, filling dish made with ingredients that were both inexpensive and easily available. You can make our version with either boneless lamb or boneless beef chuck roast. Serve with Irish Soda Bread; golden raisins give this bread a hint of sweetness that complements the stew.

Ingredients

  • 1 pound boneless lamb or boneless beef chuck roast, cut into 3/4-inch pieces
  • 4 cups beef broth
  • 2 medium onions, cut into wedges
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 4 medium potatoes (1-1/2 pounds), peeled and quartered
  • 6 medium carrots, sliced 1/2-inch thick (3 cups)
