Mississippi Pot Roast

I love, love, love this recipe! My sister made this delicious crock pot meal for our family on her recent visit from Arkansas. I can’t get enough, I’ve made it a couple of times since and I think I could eat it once a week. It’s super easy to prepare using minimal ingredients. The house has never smelled so good! The perfect accompaniment for mashed potatoes.

Ingredients:
  • 3 lb. chuck roast
  • 1 packet Ranch salad dressing mix; not the dip mix
  • 1 packet Au Jus mix
  • 1/2 to 3/4 stick butter
  • 4-6 jarred pepperoncini peppers
Instructions:

Place roast in slow cooker. Sprinkle ranch packet and au jus packet over roast. Place the butter on top of roast and add the pepperoncinis to the slow cooker, if desired pour about a 1/4 cup of pepper juice in the crockpot. Cover and cook on low for 8 hours. Remove the roast from the cooker leaving the juices in the crockpot to make gravy, turn crockpot to high. Shred or thinly slice the roast. To make a gravy use thickeners such as a flour & water or cornstarch & water mixtures and add to the juices to desired thickness for a delicious gravy. No need to season, it’s perfect the way it is!
